Ingredients
  

  • 2 ripe avocados mashed (You can also use guacamole if you’re short on time)
  • 1/4 cup red onion finely diced (Substitute with green onions for a milder flavor)
  • 1 small tomato diced (Feel free to skip if you’re not a fan!)
  • 1 tablespoon lime juice for that zesty kick
  • Salt and pepper to taste
  • 6 egg roll wrappers
  • Oil for frying Canola or vegetable oil works great

Instructions
 

  • Prepare the Filling: In a mixing bowl, combine the mashed avocados, diced red onion, tomato, lime juice, and a sprinkle of salt and pepper. Give it a good mix. Taste it! If you need a bit more lime, add away!
  • Wrapping It Up: Lay out an egg roll wrapper on a clean surface. Spoon about 2 tablespoons of the avocado mixture in the center. Fold the bottom corner over the filling, then bring in the sides, and roll up tightly. And voila! Seal the top corner with a dab of water.
  • Get Cooking: Heat oil in a deep skillet over medium heat. You’ll want it to be hot but not smoking. Drop a tiny piece of bread in to check; if it sizzles, you’re good to go! Fry each roll until they are golden brown, about 5-7 minutes.
  • Drain and Serve: Once they’re done frying, transfer your delightful egg rolls to a paper towel-lined plate to drain the excess oil. Now's the time to bask in the aroma before plating your rolls!
