- 1 can 15 oz black beans, drained and rinsed
- 1 can 15 oz kidney beans, drained and rinsed
- 1 can 15 oz diced tomatoes (with juices)
- 1 cup corn frozen or canned, both are fab
- 1 medium onion diced
- 2 cloves garlic minced
- 1 cup BBQ sauce your favorite brand
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
- Optional toppings: shredded cheese sour cream, green onions, or jalapeños
- Substitutions: If you're not into chicken feel free to swap it with turkey or even a meat substitute! You can ditch the beans for lentils or add in some veggies like bell peppers for a hearty bite.
