Step 1: Prepare Your Grill
Light your charcoal using a chimney starter for an even heat source. Once the coals are hot (they should be glowing red and covered in ash), carefully pour them into a mound on one side of the grill.
Step 2: Get the Chicken Ready!
While your coals are heating up, take some time to prep your chicken. Pat them dry with a paper towel, and then rub them down with olive oil. Sprinkle on the paprika, garlic powder, onion powder, salt, and pepper – don’t be shy! Massage the seasonings into the chicken.
Step 3: Grill Time!
Place the chicken skin-side down on the hot side of the grill for about 10-15 minutes. Keep an eye on it! You want that skin crispy and golden; adjust the heat as necessary.
Step 4: Move & Cook Through
Once the skin is nice and crispy, flip the chicken and move it to the cool side of the grill. Close the lid and let it cook for an additional 20-25 minutes. This is when the magic happens, and the flavors meld together beautifully.
Step 5: Check for Doneness
Use a meat thermometer to ensure the internal temperature is a safe 165°F. If it’s not there yet, give it a little more time!
Step 6: Serve Up & Enjoy!
Once cooked, let your chicken rest for a few minutes off the grill. Slice, garnish with fresh herbs, and serve with your favorite sides like grilled veggies, corn, or even a crisp salad!
