- 1 cup of white or brown rice
- 2 cups vegetable broth or water
- 1 can 15 ounces of black beans, rinsed and drained (or 1.5 cups of cooked beans)
- 1 tablespoon olive oil
- 1 onion finely chopped
- 2 garlic cloves minced
- 1 bell pepper any color you like, chopped
- 1 teaspoon cumin or taco seasoning for a twist!
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh cilantro for garnish totally optional but highly recommended!
Cook the Rice: Start by rinsing your rice under cold water until the water runs clear. This washes away excess starch and keeps our rice from turning gummy. In a medium saucepan, bring 2 cups of vegetable broth (or water) to a boil, add the rinsed rice, and reduce the heat to low.
