Blintz
Blintzes are thin, crepe-like pancakes filled with delicious sweet cheese or fruit fillings, then rolled up and expertly cooked to create a scrumptious dish that's perfect for breakfast, dessert, or even a delightful addition to brunch! In this recipe, I’ll share how to make blintzes from scratch while sprinkling in a touch of my own cooking journey and some handy tips to ensure your blintzes come out heavenly!

- For the Blintz Crepes:
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup milk you can substitute with almond milk for a dairy-free option!
- 2 tablespoons melted butter
- 1/4 teaspoon salt
- For the Sweet Cheese Filling:
- 1 cup ricotta cheese cottage cheese works too!
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 1 egg yolk to bind everything together, or use a tablespoon of cornstarch for vegan options
- For Cooking:
- Butter for frying
- Powdered sugar for dusting optional
- Fruit preserves or fresh fruit for serving totally optional but highly recommended!
Make the Crepe Batter: In a mixing bowl, whisk together the flour and salt. Then, in another bowl, beat the eggs and mix in the milk and melted butter. Pour the wet mixture into the dry mixture, and whisk until it’s smooth and lump-free. If it’s too thick, add a splash of milk!
Cook Those Crepes: Heat up a non-stick skillet over medium heat and melt a little butter. Pour about 1/4 cup of batter into the skillet, swirling it around to cover the bottom evenly. Cook for approximately 1-2 minutes, then carefully flip it over and cook for another minute. Transfer to a plate and repeat until all batter is cooked!
Prepare the Sweet Cheese Filling: In a bowl, mix together the ricotta cheese, sugar, vanilla extract, and egg yolk (or cornstarch). Taste it—if you think it needs more sweetness, sprinkle in a bit more sugar!
Fill and Fold: Now comes the fun part! Take a crepe, spoon about 2 tablespoons of the cheese filling in the center, and then fold in the sides and roll it up like a burrito. Don’t worry if they aren’t perfect; they’ll still taste scrumptious!
Cook the Blintzes: In a skillet over medium heat, melt a small bit of butter. Place the filled blintzes seam-side down in the skillet. Fry until they’re golden brown on both sides, about 2-3 minutes each. Yum!
Dust lightly with powdered sugar if you fancy, and serve with fruit preserves or fresh fruit on the side. The more toppings, the better!
