Instructions

  • Prep the Cauliflower: If you're using a whole head of cauliflower, chop it into florets, then toss it in a blender or food processor until it resembles rice. Don’t pulse it too much, or you’ll get mush! Set aside.
  • Cook the Chicken: In a large pan, heat the oil or ghee over medium heat. Add the sliced onions and cook until they turn golden brown, about 5-7 minutes. Stir in the garlic, ginger, and green chilies, cooking for another minute.
  • Add Chicken: Toss in the chicken pieces and season with salt. Cooking until the chicken turns white and starts browning (around 5-8 minutes).
  • Spice it Up: Sprinkle in the biryani masala and mix it well with the chicken, letting those spices bloom for about 2 minutes. Don’t forget to add the mixed veggies at this point!
  • Stir in Yogurt: Reduce the heat to low and stir in the yogurt until everything is well-combined and creamy.
  • Add Cauliflower Rice: Now, here comes the magic! Add the riced cauliflower to the pan, mixing thoroughly. Cover the pan and let it cook on low heat for about 10 minutes. This helps the flavors integrate beautifully.
  • Garnish: Once the cooking time is up, fluff your biryani with a fork, sprinkle chopped cilantro and mint on top, and adjust the seasoning to taste. Dive in!
