Ingredients
  

  • 1 lb boneless skinless chicken thighs (or chicken breasts work too!)
  • 2 tbsp olive oil
  • 2 tsp garlic powder or 2 cloves minced garlic
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • 4 pita breads or you can use flatbreads!
  • For the Tzatziki Sauce:
  • 1 cup Greek yogurt cucumber yogurt mix is a great alternative!
  • 1 medium cucumber grated
  • 1 clove garlic minced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt to taste

Instructions
 

  • Marinate the Chicken: Start by cutting your chicken thighs into bite-sized pieces. Then, in a bowl, mix together the olive oil, garlic powder, paprika, ground cumin, oregano, salt, and pepper. Add the chicken pieces and mix until they’re all coated. Cover the bowl and let it marinate for at least 10 minutes — but if you have time, letting it sit for an hour in the fridge really lets those flavors blend!
  • Make the Tzatziki Sauce: While your chicken is marinating, let’s whip up the tzatziki sauce! In a mixing bowl, combine the Greek yogurt, grated cucumber (squeeze out the excess liquid for thickness), minced garlic, olive oil, lemon juice, and a pinch of salt. Stir it all together and pop it in the fridge while you cook the chicken. This helps it chill and thicken up!
  • Cook the Chicken: Heat a pan or griddle over medium-high heat. Add your marinated chicken chunks and let them sizzle! Cook for about 6-8 minutes, stirring occasionally, until they are browned and cooked through (internal temperature should hit 165°F). The smell will be incredible, I promise!
  • Warm the Pitas: While the chicken is cooking, lightly toast your pita bread on another burner for that extra warmth. You can also heat them in the microwave for about 10-15 seconds if you're in a hurry.
  • Assemble the Gyros: Now the fun part—assembly time! Take a warm pita, pile in a generous portion of the delicious chicken, some fresh chopped lettuce, tomatoes, and red onions.
