Ingredients
  

  • 1 whole chicken cut into pieces (you can use bone-in, skin-on chicken thighs or breasts if you prefer!)
  • 1 cup green olives pitted and halved (Kalamata olives work too!)
  • 1 cup prunes pitted (dried apricots can substitute if prunes aren’t your jam!)
  • 1/2 cup capers rinsed (life’s too short for saltiness, right?)
  • 1/2 cup fresh parsley chopped
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1/2 cup brown sugar go for coconut sugar for a healthy twist!
  • 1 teaspoon garlic powder or fresh minced garlic if you like it fresh
  • 1 teaspoon oregano dried oregano also works!
  • Salt and pepper to taste

Instructions
 

  • Marinate the Chicken: In a big bowl, mix together the olives, prunes, capers, parsley, red wine vinegar, olive oil, brown sugar, garlic powder, oregano, salt, and pepper. Toss in your chicken pieces, making sure they’re all nice and coated in this delicious mixture. Cover it, and let it sit in the fridge for at least 1 hour (or more for those deep flavors).
  • Preheat the Oven: Preheat your oven to 350°F (175°C).
  • Arrange the Chicken: Grab a baking dish (and let’s be honest, the more gorgeous, the better) and place the marinated chicken pieces in there. Pour all that lovely marinade and toppings on top. Spread them out evenly, because we want everyone to soak up the goodness.
  • Bake Away: Cover the baking dish with foil and pop it in the oven for 30 minutes. This keeps your chicken tender. After that, take off the foil and let it bake for another 20 minutes. This is when it gets crispy and oh-so-tempting!
  • Serve It Up: Once your chicken is golden and cooked through, take it out and let it rest for a few minutes. Plate it up with some of that delicious sauce over the top. Feel free to sprinkle a little extra parsley for that extra pop of color!
