  • 3 tablespoons butter you can use vegan butter if you want it dairy-free
  • 1 cup chicken broth or vegetable broth for a veggie version

Instructions
 

  • Prepare the Chicken: Start by gently pounding the chicken breasts with a meat mallet (or rolling pin) between two sheets of plastic wrap until they're about 1 inch thick. This helps them cook evenly. Season both sides with salt and pepper!
  • Dredge the Chicken: Next, spread the flour on a plate and dredge each chicken breast in flour, shaking off any excess. This creates a delicious, crispy crust!
  • Heat the Pan: In a large skillet, heat the olive oil over medium-high heat. Once it’s hot, add the chicken. Cook the chicken for about 3-4 minutes per side or until it’s golden brown and cooked through. Remove the chicken from the skillet and set it aside on a plate.
  • Make the Sauce: In the same skillet, add butter, and let it melt. Add the chicken broth, lemon juice, and lemon zest, scraping the brown bits off the bottom of the pan. These are packed with flavor!
  • Add Capers: Now, stir in the capers. Let the sauce simmer for about 5 minutes until it thickens a little.
