- 4 boneless skinless chicken breasts (you can also use thighs for a juicier outcome!)
- 2 tablespoons chipotle peppers in adobo sauce adjust to your spice preference!
- 1 tablespoon olive oil
- 2 cloves garlic minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Juice of 1 lime fresh is best, but bottled works too!
- Your favorite toppings like cilantro, avocado, or cheese—let's get creative!
Marinate the Chicken: In a bowl, mix the chipotle peppers, olive oil, minced garlic, cumin, smoked paprika, lime juice, and a pinch of salt and pepper. This blend of spices is going to make our chicken burst with flavor!
Coat the Chicken: Place the chicken breasts in a large zip-seal bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is generously coated. Seal the bag or cover the dish, and let it marinate in the fridge for at least 30 minutes. (I usually let it sit for a couple of hours for deeper flavor, if I have the time!)
Heat Things Up: Time to fire up the grill! Preheat your grill or a skillet over medium-high heat. You want to hear that sizzle when you place the chicken down!
Cook the Chicken: Once your grill or skillet is hot, take the chicken out of the marinade (discard the leftover marinade) and place the chicken on the grill or skillet. Cook for about 6-7 minutes on each side, until the chicken reaches an internal temperature of 165°F (75°C) and is beautifully golden brown.
Rest and Serve: Once cooked, remove the chicken from the heat and let it rest for a few minutes. This helps keep the juices inside! Slice it up and serve with your favorite toppings. Tacos, salads, or burrito bowls, oh my!
