Ingredients
  

  • 6 large eggs
  • 1 cup diced chorizo You can use turkey chorizo for a lighter option
  • 1/2 cup shredded cheese I love cheddar, but you can try pepper jack or mozzarella!
  • 1/2 cup diced bell peppers (Mix it up with red green, or yellow!
  • 1/4 cup chopped onions Shallots or green onions work nicely too!
  • Salt and pepper to taste
  • Sour cream or salsa for topping optional, but highly recommended for that extra zing!

Instructions
 

  • Preheat the Oven: First things first, preheat your oven to 350°F (175°C). We want it nice and toasty for our little egg bites!
  • Cook the Chorizo: Grab a skillet and toss in your diced chorizo over medium heat. Cook it for about 5-7 minutes until it’s nice and browned. This is where the magic begins! Drain any excess fat and set it aside.
  • Prepare the Egg Mixture: In a large bowl, crack those eggs and whisk them up! Add in the diced bell peppers, onions, and our glorious cooked chorizo. Season with some salt and pepper, and mix well to combine.
  • Fill the Muffin Tin: Grab a muffin tin and make sure it’s well-greased or use non-stick spray liberally! Pour the egg mixture evenly into each muffin cup, filling them about 3/4 of the way to make room for rising.
  • Add Cheese: Sprinkle your shredded cheese on top of each cup. Ahh, cheese makes everything better!
  • Bake: Pop that muffin tin in the oven and let it bake for 15-20 minutes. They’re ready when they’re puffy and slightly golden. Just a little shake of the muffin tin – if they jiggle a tiny bit, they need a few more minutes!
  • Cool and Serve: Once baked, remove them from the oven and let them cool for a minute. Gently run a knife around the edges to pop them out. Serve with a dollop of sour cream or a splash of salsa for that *extra* kick!
