Ingredients
  

  • 8 oz wide rice noodles you can substitute with pad thai noodles or even spaghetti if in a pinch
  • 1 lb shrimp peeled and deveined (feel free to swap with chicken or tofu for a seafood-free option)
  • 2 tablespoons vegetable oil
  • 4 cloves garlic minced (more if you love garlic like I do!)
  • 1 red bell pepper sliced
  • 1 cup snap peas or broccoli florets
  • 3 green onions chopped (the green part adds a fresh taste!)
  • 3 tablespoons soy sauce or tamari if gluten-free
  • 2 tablespoons oyster sauce optional, or use vegan oyster sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 1 tablespoon lime juice to brighten up the flavors
  • Fresh basil leaves Thai basil is best, but regular will do
  • Chili flakes or sriracha for heat totally adjustable!

Instructions
 

  • Cook the Noodles: Bring a pot of water to boil, add the rice noodles, and cook them according to package instructions until al dente (about 4-5 minutes). Drain and rinse with cold water, then set aside.
  • Prep the Sauce: In a small bowl, mix together soy sauce, oyster sauce, fish sauce, sugar, and lime juice. Set aside, this magic potion will give your dish that zing!
  • Stir-Fry Time: In a large pan or wok, heat the vegetable oil over medium-high heat. Throw in your minced garlic and sauté until fragrant but not burnt—about 30 seconds.
  • Add Veggies: Toss in your sliced bell pepper and snap peas (or broccoli). Stir-fry those beauties for about 2 minutes until they’re vibrant and slightly soft.
  • Add Shrimp: Add the shrimp to the pan and cook for about 3-4 minutes or until they turn pink and are fully cooked. Don’t forget to give them a little stir!
  • Mix in the Noodles: Add the cooked rice noodles to the pan. Pour in your previously made sauce and toss everything together gently. Ensure all the noodles are coated in that sauce bliss!
  • Finish with Freshness: Add the green onions and basil leaves; stir-fry for another minute. Taste and adjust seasoning if needed. Spice it up with chili flakes or sriracha, if desired!
