Ingredients
  

  • 12 large egg whites or 1 cup egg white carton for convenience
  • 1 cup diced vegetables spinach, bell peppers, or zucchini all work great! Feel free to mix and match
  • 1/2 cup shredded cheese cheddar, feta, or mozzarella are all fantastic options
  • 1/4 cup diced ham or turkey optional
  • Salt and pepper to taste
  • Cooking spray or olive oil for muffin tin greasing

Instructions
 

  • Preheat Your Oven: Turn that oven up to 350°F (175°C) and let it heat up while you prep your muffin tin. This way, your muffins will bake perfectly!
  • Grease the Muffin Tin: Grab that cooking spray (or olive oil) and give your muffin tin a light coating. This helps prevent sticking. We don’t want our delicious muffins to be prisoners in the pan!
  • Whisk Those Egg Whites: In a bowl, whisk your egg whites together with a pinch of salt and pepper. Whisk them until they’re slightly frothy. It’s like getting them ready for a fun party!
  • Mix in the Good Stuff: Add the diced vegetables, shredded cheese, and meat (if using) to your egg whites. Gently mix to combine. You can customize the veggies to whatever you have on hand or whatever strikes your fancy. Let's get creative!
  • Pour the Mixture into the Tin: Carefully pour the egg mixture into each muffin cup, filling them about 3/4 full. Remember, they’ll expand!
  • Bake: Pop that muffin tin into the oven and bake for 15-18 minutes until the muffins are set and golden on top. You can also poke them with a toothpick to check if they’re fully cooked!
  • Cool & Enjoy: Once done, let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely. And then... dig in! These muffins can be enjoyed warm or cold.
