Prep Your Ingredients
Take a moment to chop up all your ingredients for the watermelon salsa. Getting this done first will make everything come together smoothly. Make sure your watermelon is nice and ripe, it’s the star of the show!
Make Your Spice Rub
In a small bowl, mix together olive oil, paprika, garlic powder, onion powder, cumin, salt, and pepper. This is where the flavor magic begins!
Rub the Fish
Grab your fish fillets and rub that spicy goodness all over each piece. Make sure they’re well coated!
Create the Foil Packets
Now, take a large sheet of aluminum foil and place your fish in the center. Fold the edges up to create a packet. Yay, we’re almost done!
Preheat the Grill or Oven
Get your grill to medium heat (about 400°F) or preheat your oven to 375°F. Quick tip: if using the oven, place the foil packet on a baking sheet for easy handling.
Cook the Fish
Put the foil packets on the grill or in the oven. Cook for about 10-15 minutes, depending on the thickness of your fillets. You know it’s done when it flakes easily with a fork!
Assemble the Salsa
While the fish is cooking, mix all your watermelon salsa ingredients in a bowl. Toss it gently, and taste for seasoning. Adjust lime juice, salt, or even add a pinch of sugar if needed—tweaking is our friend!
Serve It Up
When the fish is done, carefully open the foil packets (watch out for that steam!), and plate your fish with a generous scoop of salsa on top. Maybe throw on some extra cilantro for flair, if you like.
