  • 4 ripe tomatoes – You can swap these with canned tomatoes if you're in a pinch!
  • 1 cucumber – Substitutions: zucchini can work here too!
  • 1 bell pepper red or green – A yellow bell pepper adds a beautiful sweetness!
  • 1 small red onion – A shallot could work if you want to tone down the flavor a bit.
  • 2 cups of tomato juice – If you want it spicier try adding some spicy V8 juice!
  • 1/4 cup extra virgin olive oil – You can swap for avocado oil for a different twist.
  • 2 tablespoons red wine vinegar – Use balsamic or apple cider vinegar depending on your preference!
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish optional, but so delicious

Instructions
 

  • Prepare Your Ingredients: Start by roughly chopping the tomatoes, cucumber, bell pepper, and red onion into smaller pieces. It doesn’t need to be perfect because we’re blending it all!
  • Throw It All In: In a blender or food processor, toss in the chopped veggies, tomato juice, olive oil, and vinegar. Blend until you achieve a smooth consistency. If you like it a bit chunky, pulse it a few times instead of blending everything until entirely smooth!
  • Season It Up: Sprinkle in salt and pepper to taste. Remember, you can always add more later, so start small!
  • Chill Time: Pour the gazpacho into a bowl or airtight container and chill in the fridge for at least an hour to let those flavors mingle and bloom.
  • Garnish and Serve: Once cooled, serve it in bowls (or glasses for a fun twist!) and garnish with fresh herbs on top. Enjoy your masterpiece!
