- 2 boneless skinless chicken breasts (about 1 pound) - You can use thighs if you prefer dark meat!
- 4 cups mixed salad greens - Spinach arugula, or Romaine work great!
- 1 cup strawberries - Fresh sliced. Frozen strawberries won’t cut it here!
- 1 ripe avocado - Make sure it's soft but not mushy. You can also use mango if you want a twist.
- 1/4 cup red onion - Thinly sliced. If you’re not a fan leave it out!
- 1/4 cup crumbled feta cheese - Goat cheese is a tasty substitute!
- 1/4 cup walnuts or pecans - Optional but they add crunch. Feel free to skip if nuts aren’t your thing.
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar - This is where that extra flavor magic happens!
- Salt and pepper to taste
Grill the Chicken: First, season your chicken breasts with salt and pepper. If you’ve got a preferred seasoning, toss that on too!
Heat your grill to medium-high. You can also use a grill pan if you’re cooking indoors.
Place the chicken on the grill and close the lid. Grill each side for about 7-8 minutes or until the internal temperature reaches 165°F. Once cooked, take it off the grill and let it rest for a few minutes before slicing it up.
Prep the Salad: While the chicken is grilling, wash and dry the salad greens. Toss them in a big bowl.
Slice your strawberries and avocado. Sprinkle them over the greens.
Then, slice the red onion thinly and add it to the bowl.
Crumble the feta cheese on top, followed by the walnuts or pecans if you’re using them.
Make the Dressing: In a small bowl, combine olive oil and balsamic vinegar. Whisk it together well.
Taste and adjust with a little more salt and pepper if needed.
Assemble the Salad: Slice your grilled chicken into bite-sized pieces and place it on top of the salad.
Drizzle the dressing over the salad and gently toss everything together so everything gets a chance to mingle.
