  • ¼ cup sour cream or Greek yogurt as a healthier alternative
  • Cooking oil for frying the eggs and tortillas
  • Salt and pepper to taste

  • Cook the Tortillas: In a pan over medium heat, add a splash of cooking oil. Warm your tortillas for about 30 seconds on each side until they’re nicely toasty. Don't let them break into crisp chips, though! Keep them soft. Place them on a plate and cover with a towel to keep warm.
  • Fry Up Those Eggs: In the same pan, add a bit more oil if needed and crack in the eggs. Fry them sunny side up or however you like your yolks! Season with a sprinkle of salt and pepper. Cook until the whites are set, but the yolks stay runny!
