Ingredients
  

  • 1 can 15 oz of chickpeas (drained and rinsed) – you can use dried chickpeas, but it requires more time!
  • 1/4 cup tahini
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed is best!
  • 1 garlic clove minced – you can add more if you love garlic!
  • 1/2 teaspoon ground cumin
  • Salt to taste
  • Water as needed about 2-4 tablespoons
  • Optional: Paprika or chili flakes for garnish
  • Substitutions: If you don’t have tahini you can use sunflower seed butter or even peanut butter in a pinch. If fresh garlic isn’t available, garlic powder works too at 1/4 teaspoon!

Instructions
 

  • Drain and rinse the chickpeas. And then toss them into your food processor. No worries, I’m sure you can handle this step!
  • Add tahini, olive oil, lemon juice, minced garlic, cumin, and salt. This is where the magic begins! Just throw it all in!
  • Blend it until smooth. You might think it’s a bit thick. That’s where the water comes in. Add it in 1 tablespoon at a time until you reach that perfect creamy consistency. You want it to be silky, not chunky!
  • Taste and adjust. Now’s your chance to be the chef! Need a little more lemon juice or salt? Go for it!
  • Transfer to a serving bowl. Smooth it out, and drizzle some olive oil on top. A sprinkle of paprika or chili flakes adds a nice touch!
  • Serve immediately. Or let it chill in the fridge a bit. Either way, you’ll love it!
