  • 2 tablespoons vegetable oil or coconut oil for a sweet twist
  • 1 large onion diced
  • 3 garlic cloves minced
  • 1 inch piece of ginger minced
  • 1 tablespoon curry powder
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 can 14 oz coconut milk
  • 2 cups vegetable broth or water
  • 1 cup chopped spinach optional, can substitute with kale
  • 1 large tomato chopped (or one can of diced tomatoes)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions
 

  • Rinse the Lentils: Start by giving your lentils a good rinse under cold water. This helps to remove any dust or debris. Set them aside.
  • Heat the Oil: In a large pot or skillet, heat your vegetable oil over medium heat. A little glitter in the oil means it’s ready for action!
  • Sauté the Aromatics: Add the diced onion and sauté for about 5 minutes, until it’s soft and translucent. Then throw in the minced garlic and ginger and cook for another 2 minutes until fragrant.Your kitchen should be smelling heavenly by now!
