  • 1 cup green or brown lentils my go-to are brown!
  • 2 ½ cups of water or vegetable broth for flavor—yum!
  • 1 red bell pepper diced
  • 1 cucumber diced
  • 1 cup cherry tomatoes halved
  • ¼ red onion finely chopped
  • 1 cup of parsley chopped (or swap for cilantro if you’re feeling adventurous!)
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar but lemon juice works, too!
  • 1 teaspoon garlic powder or 2 minced cloves if you like it fresh
  • Salt and pepper to taste
  • **Substitutions:**
  • If you’re out of lentils chickpeas work too!
  • No fresh herbs? Dried herbs will do—just half the amount!
  • Trade the balsamic for red wine vinegar or lemon juice for a fresher taste.

Instructions
 

  • Cook the Lentils: First, rinse those lovely lentils under cold water to get rid of any grittiness. Then, toss them in a pot with 2 ½ cups of water (or broth if you’re feeling fancy!). Bring it to a boil and then reduce to a simmer for about 25 minutes, until they’re tender but not mushy.
  • Prep the Veggies: While your lentils are cooking, grab your chopping board and start dicing! Cut the red bell pepper, cucumber, and cherry tomatoes, and slice the red onion. Don’t forget to chop up that parsley; it adds such a fresh kick!
  • Make the Dressing: In a small bowl, mix together the olive oil, balsamic vinegar, garlic powder, salt, and pepper. Whisk it well (optional: do this while dancing in the kitchen—makes it more fun!). Taste it and adjust the seasonings if you like.
