Ingredients
  

  • 1 cup green or brown lentils sub: canned lentils, rinsed
  • 1 small onion diced (sub: shallots)
  • 2 garlic cloves minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika sub: regular paprika
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • Toppings: diced tomatoes shredded lettuce, avocado, salsa, lime, and cheese (sub: vegan cheese)

Instructions
 

  • Prep Your Lentils: In a good-size pot, throw in your lentils and cover them with water. Rinse and drain them thoroughly. Keep 'em clean!
  • Sauté Those Aromas: In a skillet over medium heat, add a splash of olive oil. Toss in your diced onion and sauté until they’re soft and a little golden (about 3-4 minutes). Smells sooo good already!
  • Garlic Goodness: Stir in the minced garlic and let it cook for just about 30 seconds. You want it fragrant, not burnt!
  • Spice, Spice, Baby: Now, add the cumin, chili powder, and smoked paprika. Stir these spices into the onion and garlic to create a flavorful base. Magical!
  • Bring in the Lentils: Add the rinsed lentils to the skillet, followed by the vegetable broth. Bring everything to a bubble. Then reduce the heat, cover, and let it simmer for 15-20 minutes, or until the lentils are tender.
  • Create Tacos: While the lentils are cooking, heat your tortillas in a separate skillet until they’re warm and pliable. You can wrap them in a clean kitchen towel to keep them warm.
  • Final Touches: After your lentils are cooked, season with salt and pepper and a squeeze of lime juice. Now comes the fun part—in a warm tortilla, pile on those lentils and load up with your favorite toppings. Get creative!
