Ingredients
  

  • 2 ripe mangoes diced (Substitution: You can swap with peaches if mangoes are out of season)
  • 1 small red onion finely chopped (Substitution: Green onions work great too!)
  • 1 jalapeño pepper seeds removed and minced (Substitution: Bell pepper for less heat)
  • 1/4 cup fresh cilantro chopped (Substitution: Parsley can be used)
  • Juice of 1 lime
  • Salt & pepper to taste

Instructions
 

  • Prep the Mango: First, peel and dice those ripe mangoes. Make sure they're nice and juicy—a ripe mango should give just slightly when you squeeze it. Toss the diced mango into a big mixing bowl.
  • Chop It Up: Next, we’ll chop the red onion and jalapeño. Don't forget to remove the seeds from the jalapeño; unless you want a fiery salsa, then leave them in! (You brave souls!)
  • Mix It All Together: In the bowl with the mango, add the chopped onion, jalapeño, and cilantro.
  • Flavor Explosion: Squeeze the lime juice over the mixture, sprinkle a pinch of salt and pepper, and stir everything gently. Taste it, and adjust the salt or lime juice if needed. You want that perfect balance!
  • Chill Out: If you have the time, let the salsa sit in the fridge for about 10 minutes to let those flavors mingle. But if you’re too eager (which I totally get!), just dig in with your favorite chips right away!
