Ingredients

  • 1 lb ground beef or ground turkey for a healthier option
  • 1 taco seasoning packet homemade works great too!
  • 1 cup shredded cheddar cheese or your favorite cheese
  • 1 cup shredded lettuce
  • 1 small diced tomato
  • 4 large flour tortillas corn tortillas work too!
  • 1/2 cup sour cream or Greek yogurt
  • Hot sauce to taste, if you're feeling feisty

Instructions

  • Brown the Meat: In a skillet over medium heat, add your ground beef. Cook it until it’s browned, breaking it up with your spatula as you go. This usually takes about 5-7 minutes.
  • Season It Up: Once your meat is all nice and crispy, add that taco seasoning according to the packet instructions. You may want to sprinkle in some extra chili powder or cumin if you like a little kick! Stir it around nicely.
  • Melt the Cheese: Next, sprinkle in the shredded cheddar cheese and mix until it’s melty and gooey! Ah, the glorious moment. Remove your skillet from heat.
  • Assemble Your Meximelt: Grab a tortilla, and on one half, spoon on some of your meat and cheese mixture. Top with lettuce, diced tomatoes, and if you're feeling fancy, a dollop of sour cream. Fold your tortilla over (like a taco but better!) and press gently.
  • Heat It Up: In a clean skillet over medium heat, cook your folded Meximelt for about 2-3 minutes per side, or until it’s golden and crispy. Flip carefully!
  • Final Touches: Once cooked, top with extra cheese, sour cream, and a little hot sauce if desired. Cut each Meximelt in half and serve immediately. Ready to dig in?
