  • 4 large eggs
  • 1 small onion diced (you can swap this with green onions for a milder taste)
  • 1 bell pepper chopped (red or green, whatever makes your heart sing!)
  • 1 jalapeño diced (optional for heat!)
  • 1 cup of shredded cheese cheddar, queso fresco, or even just whatever you’ve got!
  • Cooking oil olive, canola, or any oil in your pantry
  • Salt and pepper to taste
  • Fresh cilantro for garnish optional, but it looks pretty and adds flavor!

  • Crispify the Tortillas: Next, add the tortilla strips to the skillet. Stir and cook them for about 5-7 minutes until they are super crispy and just a little browned. You want that crunch factor!
