Ingredients
  

  • 1 cup creamy peanut butter you can substitute with almond butter for a nutty twist
  • ½ cup powdered sugar can use coconut sugar for a healthier option
  • 1 ½ cups chocolate chips milk chocolate, dark chocolate, or semi-sweet—your choice!
  • 1 tablespoon coconut oil this smooths out the chocolate, but you can leave it out if you want!

Instructions
 

  • Mix the Peanut Butter Filling: First things first! In a mixing bowl, combine your creamy peanut butter and powdered sugar. Mix them together until smooth. If you want to add a pinch of salt for a little extra flavor, feel free! Once it’s all nice and creamy, set it aside.
  • Melt the Chocolate: Now, let’s melt that chocolate! In a microwave-safe bowl, add your chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between until completely melted and glossy. Be careful not to overheat it!
  • Create the Chocolate Base: You’re almost there! Grab a cupcake pan and line it with cupcake liners. Spoon a tiny amount of melted chocolate (about 1 tablespoon) into the bottom of each liner. Use the back of your spoon to spread it around and make a nice even layer. Pop it in the fridge for about 10 minutes to set.
  • Add the Peanut Butter Filling: Once your chocolate base is hardened, it’s peanut butter time! Take that creamy peanut butter mixture we made earlier and scoop about 1 tablespoon into each chocolate base. Spread it out evenly, leaving a little room on the edges for the final chocolate layer.
  • Top It Off: Alright, let’s finish these bad boys! Pour another layer of melted chocolate over the peanut butter filling in each cup. Make sure it’s well-covered, then tap the pan gently on the counter to remove any air bubbles. Pop it back in the fridge once more for another 20 minutes to set completely.
