Marinate the Chicken: In a bowl, combine the olive oil, lemon juice, vinegar, minced garlic, ground cumin, smoked paprika, salt, and black pepper. Whisk it all together until it’s nicely blended.
Add the chicken cubes into the marinade, ensuring every piece is coated. Cover the bowl and let it hang out in the fridge for at least 15-20 minutes to soak up all those yummy flavors.
Prepare the Skewers: While your chicken is marinating, grab those wooden skewers and soak them in water (if you haven’t done this already). This helps to prevent them from burning on the grill. Let's make sure our chicken doesn't go rogue while cooking!
Assemble Those Skewers: Once the chicken is ready, let’s get assembling! Thread the marinated chicken onto the skewers, leaving a little space in between each piece for even cooking.
Fire Up the Grill: Heat your grill to medium-high heat. If you’re using a grill pan on the stove, that's cool too! Lightly oil the grill grates to prevent the chicken from sticking.
Grill Time: Place the assembled skewers on the grill and cook for about 15 minutes, turning them occasionally. You want that beautiful char and juicy insides, so don’t walk away for too long!
Serve It Up: Once they’re done (check for an internal temperature of 165°F), take them off the grill and let them rest for a few minutes. Serve with your favorite dipping sauce, maybe a spicy aji verde sauce, and enjoy with your friends and family!
