- 2 cups fresh basil leaves you can substitute with spinach for a milder flavor
- 1/2 cup grated Parmesan cheese or nutritional yeast if you're vegan
- 1/2 cup extra virgin olive oil
- 1/3 cup pine nuts walnuts or almonds are great substitutes
- 2-3 cloves of garlic adjust based on your garlic love
- Salt and pepper to taste
- 12 oz pasta spaghetti, penne, or your favorite shape
- Cherry tomatoes for garnish optional
Cook the Pasta: Boil a large pot of salted water. Once bubbling, add your pasta and cook according to package instructions until al dente. Always leave it a minute shy of the suggested time for that perfect bite!
Blend the Pesto: While the pasta is cooking, let’s make that glorious pesto! In a blender or food processor, combine the basil leaves, Parmesan cheese, pine nuts, garlic, and a pinch of salt and pepper. Blend until it’s a nice, chunky paste.
Add Olive Oil: With the blender running, slowly pour in the olive oil until it reaches a smooth consistency. You can adjust the oil to your liking; I personally love it a bit creamier!
