Ingredients
  

  • 2 cups fresh basil leaves you can substitute with spinach for a milder flavor
  • 1/2 cup grated Parmesan cheese or nutritional yeast if you're vegan
  • 1/2 cup extra virgin olive oil
  • 1/3 cup pine nuts walnuts or almonds are great substitutes
  • 2-3 cloves of garlic adjust based on your garlic love
  • Salt and pepper to taste
  • 12 oz pasta spaghetti, penne, or your favorite shape
  • Cherry tomatoes for garnish optional

Instructions
 

  • Cook the Pasta: Boil a large pot of salted water. Once bubbling, add your pasta and cook according to package instructions until al dente. Always leave it a minute shy of the suggested time for that perfect bite!
  • Blend the Pesto: While the pasta is cooking, let’s make that glorious pesto! In a blender or food processor, combine the basil leaves, Parmesan cheese, pine nuts, garlic, and a pinch of salt and pepper. Blend until it’s a nice, chunky paste.
  • Add Olive Oil: With the blender running, slowly pour in the olive oil until it reaches a smooth consistency. You can adjust the oil to your liking; I personally love it a bit creamier!
  • Toss It Together: Once your pasta is cooked, drain it (keeping a little pasta water if you want a creamier sauce!) and return it to the pot. Add the pesto sauce and give it a good toss to coat every noodle. If you find it too thick, just drizzle in some of that reserved pasta water until it’s just right!
  • Serve and Enjoy: Plate up your Pesto Pasta, adding some cherry tomatoes on top for a splash of color. Maybe even a sprinkle of extra Parmesan if you’re feeling fancy! Then, dig in and enjoy the deliciousness you've created!
