Ingredients

  • 4 salmon fillets you can swap these for chicken breasts if you’re not a fish fan
  • 1/2 cup of fresh basil pesto or store-bought, no judgment here!
  • 1 tablespoon of olive oil
  • 1 teaspoon of garlic powder
  • Salt and pepper to taste
  • Lemon wedges for garnish optional

Instructions

  • Preheat your Oven: First things first, we need to preheat the oven to 400°F (200°C). This will make sure our salmon gets nice and flaky.
  • Prepare the Salmon: While the oven heats up, grab your salmon fillets and place them on a baking tray lined with parchment paper. Drizzle a little olive oil over them, then sprinkle with garlic powder, salt, and pepper. Cooking tip: Parchment paper makes for an easy cleanup!
  • Spread the Pesto: Now, take that delicious pesto and spread a generous layer over each salmon fillet. If you love flavor like I do, don’t hold back!
  • Time to Bake: Pop that tray into your preheated oven and let it bake for about 12-15 minutes. The salmon should be opaque and flake easily with a fork. Keep an eye on it, as oven times can vary.
  • Serve it Up: Once it’s done, take it out and let it rest for a couple of minutes if you can resist! Squeeze some fresh lemon juice over the top, and voilà! You’ve got a plate of Pesto Salmon ready to impress.
