  • 1 teaspoon salt
  • 1 teaspoon black peppercorns optional, but they add a lovely taste
  • 1/2 teaspoon red pepper flakes for a spicy kick!
  • 1 bay leaf optional, adds nice herbaceousness

  • Step 1: Prep Your Onions
  • First things first! Grab that red onion and peel it. Then, slice it thinly. If you have a mandoline, use it! This makes slicing super quick and easy. But if you're like me and prefer a good old knife, steady hands will do just fine!
  • Step 2: The Brine
  • In a saucepan, combine the white vinegar, sugar, salt, and black peppercorns. If you want it spicier, sprinkle in those red pepper flakes! Bring the mixture to a simmer over medium heat until the sugar and salt dissolve. This should only take a few minutes—don’t wander off, or you might end up with a vinegar volcano!
  • Step 3: Combine and Cool
  • Once everything is all mixed together, toss in your sliced onions. Give them a gentle stir to ensure they're coated in that flavorful brine. Now, let this concoction cool for about 10-15 minutes. Grab a jar while you wait—it’s time to show off your pickled onions!
  • Step 4: Jar it Up
  • Once the onion mixture has cooled, carefully place it into your jar, packing it down slightly to make sure all the onions find their happy place. Pour in the leftover brine until the onions are fully submerged. And if you have a bay leaf, toss it in for extra flavor!
