  • 1 cup brown sugar or coconut sugar for a healthier twist
  • 1/2 cup apple cider or water if you’re out of cider
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/4 teaspoon allspice optional, but adds a nice kick
  • 1/2 teaspoon lemon juice (adds a little zing

Instructions

  • Combine Ingredients: In a large saucepan, mix together the pumpkin puree, brown sugar, apple cider, vanilla extract, and all those wonderful spices. Give it a good stir to combine.
  • Heat it Up: Place your saucepan over medium heat. Stir occasionally until the mixture begins to simmer.
  • Let it Simmer: Once it’s bubbling, lower the heat to a gentle simmer. Let it cook for about 45 minutes, stirring every now and then. This is where the magic happens, as it starts to thicken and the flavors meld together!
  • Check for Thickness: After 45 minutes, check the consistency. If you’d like it thicker, cook it a bit longer—just keep an eye on it!
  • Final Touch: Once it’s reaching your desired thickness, remove it from the heat and stir in the lemon juice. This will brighten all the fab flavors!
  • Cool and Store: Allow it to cool, then transfer your pumpkin butter into jars. You can store it in the fridge for up to 2 weeks or freeze it for a later treat!
