- Let me take you back to when I first decided to whip up this delightful dish. I was feeling adventurous in the kitchen and Ratatouille seemed like the perfect choice. After gathering all my ingredients, I confidently started chopping. Spoiler alert: I totally nailed it! The first time was a success, and the kitchen smelled incredible.
- However there were a few surprises. I didn't expect how much the flavors would meld together as they cooked. The vibrant colors of the veggies transformed into a beautiful medley! I also made a couple of tweaks. I added a pinch of herbes de Provence for that extra oomph, and I may have snuck in a dash of chili flakes for a little heat.
Prep your ingredients: Wash, chop, and dice all your veggies as mentioned in the ingredients list. It’s like creating a colorful painting! Don’t forget to keep your cutting board handy.
Heat the olive oil: In a big pot or skillet over medium heat. Once it’s nice and hot, toss in the onions and sauté them until they are soft and slightly golden, about 5 minutes.
Add the garlic and stir for another minute until fragrant. Seriously, you’ll be loving the smell already!
Next, layer in the eggplant. Sauté it for about 5-7 minutes until it starts to soften. Eggplant has a little bit of a diva attitude, but it’s worth it!
Then, toss in your zucchini and bell pepper. Cook these for another 5-7 minutes, stirring occasionally.
Now for the star of the show! Add the tomatoes (or canned ones). If you’re using fresh tomatoes, a quick tip: you can peel them easily by boiling them for 30 seconds, then putting them in cold water!
Season everything with salt, pepper, sugar, and your herbs. Stir it well, and let it simmer on low heat for 20-25 minutes. Don’t forget to stir occasionally!
Check for seasoning halfway through. Adjust to taste, you’re the chef!
