Ingredients
  

  • 1 cup long-grain rice basmati is fabulous!
  • 2 tablespoons olive oil or butter
  • *Substitution: coconut oil for a tropical twist!
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • *Substitution: 1 teaspoon garlic powder.
  • 2 cups chicken or vegetable broth
  • *Substitution: water will work in a pinch!
  • 1 carrot diced (optional)
  • 1/2 cup frozen peas or fresh if you prefer
  • 1/2 teaspoon cumin
  • *Substitution: coriander for a citrusy kick.
  • Salt and pepper to taste
  • Fresh herbs like parsley, for garnish (optional)

Instructions
 

  • Toast the Rice: In a medium saucepan, heat the olive oil over medium heat. Throw in the rice and toast for about 2–3 minutes, stirring occasionally until it turns a lovely golden color.
  • Add Onions and Garlic: Add your chopped onion and minced garlic to the toasted rice, sautéing them until the onions become translucent (about 3–4 minutes).
  • Pour in the Broth: Next, slowly add your broth to the pan. Watch out for splattering! Bring it to a boil!
  • Add Veggies and Spices: Once it’s boiling, add in the diced carrot, peas, and cumin (if using). Stir to mix everything well.
  • Simmer: Reduce heat to a low simmer, cover, and let it cook for about 15-20 minutes until all the liquid is absorbed and rice is fluffy.
  • Fluff and Serve: Remove from heat and use a fork to fluff up the rice! Serve hot, garnished with fresh herbs if you like.
