- 2 cups of fresh spinach you can use frozen, just thaw it out
- 2 cups of vegetable broth or water
- 1 tablespoon of olive oil
- 1 small onion diced
- 2 cloves of garlic minced
- 1/2 teaspoon of salt adjust to taste
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of red pepper flakes optional for a kick!
- Juice of half a lemon my favorite addition!
- Parmesan cheese for garnish optional
- Substitutions:
- Don’t have spinach? Try using kale or Swiss chard!
- Rice can be swapped for quinoa or couscous if you're feeling adventurous.
- You can replace olive oil with coconut oil for a different flavor profile.
Prepare the Rice: In a medium pot, add the rinsed rice, and pour in the vegetable broth or water. Bring it to a boil, then reduce the heat to low, cover, and let it simmer for about 15 minutes or until all the water is absorbed. You can do the happy dance while you wait!
