Ingredients
  

  • 1 whole chicken about 4-5 pounds
  • 2 lemons 1 for juice and 1 diced
  • 4 sprigs of fresh rosemary need a substitution? Use dried rosemary, but cut back to 2 teaspoons
  • 4 cloves of garlic minced, yum! If you're feeling lazy, garlic powder works too—about 2 tsp
  • 3 tablespoons olive oil
  • Salt & pepper to taste
  • 1 onion quartered for extra flavor

Instructions
 

  • Preheat and Prep: First things first, let’s preheat that oven. Crank it up to 425°F (220°C). While that’s heating, we’ll prepare our beautiful bird!
  • Make the Rub: In a bowl, mix together the olive oil, minced garlic, the juice of one lemon, and some salt & pepper. This is our magical rub that will coat our chicken and flavor it from the inside out.
  • Season the Chicken: Grab your chicken and pat it dry with paper towels. No one likes a soggy chicken! Now, rub that olive oil mixture all over the chicken. Get in there, massage it like you’re at a spa day for the chicken! Then, stuff the chicken cavity with the quartered onion, diced lemon, and rosemary sprigs. This will add a ton of flavor while it roasts!
  • Roast Away: Place your seasoned chicken in a roasting pan breast-side up. This is where the magic happens. Roast in the preheated oven for about 1 hour. Oh, and halfway through, flip the chicken carefully so both sides get that golden color. Use a meat thermometer to check the internal temperature; it should reach about 165°F (75°C) in the thickest part.
  • Rest & Serve: Once cooked, take out the chicken and let it rest for about 10-15 minutes (I know, the wait is tough!). This allows the juices to settle. Finally, carve it up, serve it with your favorite sides, and get ready for a flavor explosion!
