Ingredients
  

  • 1 lb salmon fillet skin removed
  • 1 cup plain yogurt you can use Greek yogurt for extra tanginess
  • 2 tablespoons tikka masala spice mix store-bought or homemade
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 2 tablespoons oil olive or vegetable
  • 1 large onion finely chopped
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 1 can 14 oz diced tomatoes (or 2 fresh tomatoes, chopped)
  • ½ cup heavy cream for a lighter option, you can use coconut cream
  • Fresh cilantro for garnish
  • Ingredient Substitutions: If you don’t have tikka masala spice you can substitute it with curry powder but keep in mind the flavors will be different. Also, you could swap salmon with chicken or even firm tofu for a vegetarian option!

Instructions
 

  • Step 1: Marinate Your Salmon
  • In a bowl, mix the yogurt, tikka masala, lemon juice, and salt. Cut your salmon fillet into bite-sized cubes and toss them into the bowl until evenly coated. Cover and let it marinate for at least 15 minutes (you can even let it chill in the fridge for a few hours if you have time!).
  • Step 2: Sauté Your Aromatics
  • In a large skillet, heat the oil over medium heat. Add in the chopped onions and cook until they’re translucent, about 5-7 minutes. Stir in the garlic and ginger, cooking for an additional minute.
  • Step 3: Cook the Salmon
  • Once your onions are all nice and golden, it's time to add the marinated salmon (including all that tasty yogurt marinade!). Cook for about 5-7 minutes until the salmon is just cooked through—a little pink in the center is okay since it will continue to cook in the sauce!
  • Step 4: Add the Tomatoes
  • Next, toss in the diced tomatoes. Let it simmer for another 5-10 minutes, allowing those flavors to meld together beautifully.
  • Step 5: Cream It Up!
  • Finally, stir in the heavy cream. Let it simmer for another 3-4 minutes until the sauce thickens slightly, and you’re ready to serve!
  • Step 6: Garnish and Enjoy!
  • Serve your Salmon Tikka Masala over rice or with warm naan, and don’t forget to sprinkle some fresh cilantro on top for that burst of freshness!
