  • 1 pound of shrimp peeled and deveined, use fresh if you can; frozen shrimp works too—just thaw properly!
  • 1 cup lime juice freshly squeezed makes a huge flavor difference!
  • 1/2 cup red onion finely chopped
  • 1 medium cucumber diced; the crunchiness is key!
  • 1 rib celery chopped, this adds a nice crunch
  • 1-2 tomatoes diced; any kind of tomato works here!
  • 1 jalapeño seeded and finely chopped; remove the seeds if you want it less spicy
  • 1 handful of cilantro chopped, for that fresh herbal kick
  • Salt to taste

  • Prep the Shrimp: First, you’ll want to get that shrimp ready to go. If using frozen shrimp, make sure it’s thawed properly. Grab your shrimp, toss it into a bowl, and pour the lime juice over it. Make sure all the shrimp is covered in juice. This will help "cook" the shrimp in a super fresh way!
  • Let it Marinate: Cover your bowl with plastic wrap or a lid and pop it in the fridge. Let the shrimp marinate for about 30 minutes. You'll know it's done when the shrimp turns opaque and looks gorgeous.
