  • 2 cups of cherry tomatoes If out of season, feel free to use canned diced tomatoes or halved regular tomatoes
  • 3 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano fresh oregano is even better if you have it!
  • Salt and pepper to taste
  • Fresh basil for garnish optional, but it adds that lovely finish
  • Lemon wedges for serving

  • Prepare the Flounder: Start by patting your flounder fillets dry with some paper towels. This helps them brown nicely. Now, sprinkle a little salt and pepper on both sides. It’s time to get seasoned!
  • Heat the Pan: Grab your trusty skillet and heat that olive oil over medium-high heat. We want it nice and hot, but not so hot that the oil starts smoking. You know, a good sizzle is what we’re after!
  • Cook the Garlic and Tomatoes: Once the oil is shimmering, toss in the minced garlic and cook for about 30 seconds until fragrant. Then, add your cherry tomatoes.
