Preheat your oven to 350°F (175°C): It’s super important to start with a hot oven for that perfect bake.
Prepare the sweet potatoes: If you're using fresh sweet potatoes, peel and chop them into chunks, then boil them in water until tender (about 15-20 minutes). Drain, let them cool, and then mash until smooth. If using canned puree, just scoop it out and you’re good to go!
Mix the wet ingredients: In a large bowl, beat together the mashed sweet potatoes, granulated sugar, brown sugar, eggs, oil, and vanilla extract. Mix until everything is well combined. It should look nice and creamy!
Combine the dry ingredients: In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger. This will help distribute the baking powder and baking soda evenly throughout your bread.
Bring it all together: Slowly fold the dry ingredients into the wet ingredients using a spatula or wooden spoon. Be gentle; you don’t want to overmix. Just mix until everything is combined. If you’re adding nuts or raisins, mix them in now!
Prepare your loaf pan: Lightly grease a 9x5 inch loaf pan or line it with parchment paper. Make sure it’s ready for that sweet mixture!
Pour and smooth: Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake: Pop it in the oven and let it bake away for about 60-70 minutes, or until a toothpick inserted into the center comes out clean. Your kitchen will smell like a dream!
Cool time: Once it’s done, take it out and let it cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Patience is key! (But I know it’s hard!)
Slice and enjoy: Once completely cool, slice it up and enjoy a piece (or two!). It’s delightful on its own, but you can also slather on some butter or cream cheese for an extra treat!
