Ingredients

  • 8 oz. of sushi-grade tuna or salmon if you prefer that flavor and texture
  • 1 cup cooked sushi rice quinoa or brown rice works too!
  • ½ cup diced cucumber you can swap for zucchini
  • ½ cup diced avocado if you’re feeling bold, try mango!
  • ½ cup shredded carrots or switch them for bell peppers
  • 2 green onions sliced (sub with chives if needed)
  • ¼ cup soy sauce or tamari for a gluten-free option
  • 1 tsp sesame oil can use olive oil for a different flavor
  • 1 tsp rice vinegar
  • 1 tsp sriracha if you love heat; or skip it for mild
  • Sesame seeds for garnish

Instructions

  • Prepare the Base: Start with your sushi rice. If you haven’t cooked it yet, just follow the package instructions. Once it’s fluffy and cooled down, it’s ready to use!
  • Chop the Stars: Now, grab your sushi-grade tuna and cut it into bite-sized cubes. Make sure to keep the cuts nice and clean. Then, do the same for your vegetables: cucumber, avocado, and carrots. Keep those veggies lively and colorful!
  • Mix Your Dressing: In a small bowl, combine the soy sauce, sesame oil, rice vinegar, and sriracha if you're including it. Give it a good whisk and taste – you might want to adjust it a bit; add more soy for saltiness, more vinegar for tang, or more sriracha for heat!
  • Combine Exciting Ingredients: In a big mixing bowl, toss your cooked rice, diced tuna, and chopped veggies. Drizzle your dressing over everything, and gently mix it up until every piece is coated and happy. Don’t be too rough; you want that beautiful avocado to stay intact.
  • Serve It Up: Time to bowl it up! Serve the poke salad in individual bowls or one big serving dish. Top them with sesame seeds and green onions for that extra pop of flavor and color. Enjoy your creation right away!
