  • 1 lb ground turkey or ground chicken for a change
  • 1 cup onion chopped
  • 1 cup bell pepper chopped (any color you like)
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14 oz, no need to drain
  • 1/2 cup raisins or dried cranberries for a tart touch
  • 1/2 cup green olives sliced
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Fresh cilantro or parsley for garnish optional

Instructions
 

  • Heat It Up: Grab a large skillet and add 1 tbsp of olive oil. Heat it over medium heat until it shimmers.
  • Sauté the Veggies: Add 1 cup of chopped onions and 1 cup of chopped bell pepper to the skillet. Sauté for about 3-4 minutes until they’re soft and fragrant. Don’t forget to stir occasionally!
  • Add the Turkey: Now, it’s time to put in the 1 lb of ground turkey and break it apart with a spatula. Cook until it’s no longer pink, which usually takes about 5-7 minutes.
  • Flavor Town: Once the turkey is cooked, toss in 2 cloves of minced garlic, 1 can of diced tomatoes, 1/2 cup of raisins, and 1/2 cup of sliced olives. Give it a good stir to mix all the flavors together!
  • Spice It Up: Sprinkle in your spices: 1 tsp cumin, 1 tsp oregano, 1 tsp paprika, and a pinch of salt and pepper. Stir everything together, and let it simmer for about 10-15 minutes. If it looks too thick, you can add a splash of water.
  • Serve It: Once it’s all cooked and smelling heavenly, serve your Turkey Picadillo on a plate. Top it off with some fresh cilantro or parsley for a pop of color.
