  • 1 lb ground turkey you can substitute with ground beef or chicken if desired
  • 1 bell pepper chopped (any color works)
  • 1 small onion diced
  • 1 can 15 oz black beans, rinsed and drained (or you can use pinto beans)
  • 1 can 14.5 oz diced tomatoes with green chilies
  • 1 packet 1 oz taco seasoning (or make your own blend)
  • 2 cups corn frozen or canned
  • 1 cup shredded cheese cheddar or Mexican blend
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Optional toppings: sour cream avocados, or lime juice

Instructions
 

  • Get Prepped: Grab all your ingredients and chop the bell pepper and onion. It's like preparing for a dance; you want to have everything ready to flow smoothly!
  • Heat ‘er Up: In a large skillet, heat a drizzle of olive oil over medium heat. Once it’s nice and hot, toss in the diced onions and bell peppers. Sauté for around 3-4 minutes until they get all fragrant and soft.
  • Turkey Time: Add in the ground turkey and cook, breaking it apart with a spatula, until it’s browned and cooked through, about 5-7 minutes. Don’t forget to sprinkle some salt and pepper to wake up those flavors!
  • Mix it Up: Stir in the black beans, diced tomatoes (with their juice!), corn, and taco seasoning. Mix everything together so that all the flavors become besties. Cook for another 5 minutes to meld those yummy flavors together.
