Vegan French Toast

This Vegan French Toast recipe is not only super easy to whip up, but it also delivers a fun twist on the classic dish. Ingredients
  

  • 1 cup non-dairy milk I used almond milk; you can also use soy or oat milk
  • 1 tablespoon ground flaxseed mixed with 2.5 tablespoons of water this is our egg substitute; you can use chia seeds too!
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon you can add more if you're a fan!
  • 1 tablespoon sugar or maple syrup for sweetness
  • 4 slices of sturdy bread whole grain or sourdough work great
  • 1 tablespoon vegan butter or coconut oil for cooking
  • Optional toppings: maple syrup fresh fruit, powdered sugar, nut butter

Instructions
 

  • In a bowl, mix together the non-dairy milk, flaxseed mixture, vanilla extract, cinnamon, and sugar. Whisk it all together until you have a smooth mixture. Let it sit for a few minutes to thicken up!”
  • While waiting, you can heat a skillet over medium heat and melt a bit of vegan butter or coconut oil in it.
  • When the mixture is ready, take a slice of your sturdy bread, dip it into the mix on both sides (but don’t drown it – just coat it well!), and let any excess drip off.
  • Place the coated slice onto the heated skillet. Fry for about 2-3 minutes on each side, or until it’s golden brown and a little crispy.
  • Repeat with the remaining slices. You can keep them warm in the oven (on low), as you finish cooking.
  • When done, stack your luscious vegan French toast, drench it with maple syrup, and throw on your favorite toppings - strawberries, bananas, or a sprinkle of powdered sugar are all winners!
