Ingredients

  • 1 can 15 oz black beans (drained and rinsed)
  • Can be substituted with chickpeas or kidney beans
  • 1/2 cup rolled oats
  • Quick oats work too!
  • 1/2 cup chopped onion
  • 1/2 cup grated carrots
  • Zucchini works too!
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh parsley chopped
  • 1/4 cup breadcrumbs
  • Use gluten-free if needed
  • 1 tbsp olive oil for cooking
  • Burger Buns
  • Any type you like
  • Toppings: lettuce tomato, avocado, pickles - you choose!

Instructions

  • Mash the Beans: Start by grabbing a large bowl and add your drained black beans. Using a fork or a masher, mash those beans up until mostly smooth. It’s okay to leave a few chunks; they add character!
  • Mix It All Together: Now, toss in your rolled oats, chopped onion, grated carrots, minced garlic, cumin, paprika, salt, pepper, parsley, and breadcrumbs. This is where the magic begins! Mix everything with a spoon until it’s well combined.
  • Shape Your Patties: Once it’s all mixed, it’s time to shape your burgers. Grab a handful of the mixture and form it into a patty about ¾ inch thick. You should get about four patties from this recipe.
  • Heat Up the Pan: In a non-stick skillet, heat up your olive oil over medium heat. Make sure it’s nice and hot before adding the patties.
  • Cook the Patties: Carefully place the patties in the skillet. Sizzle, sizzle! Cook them for about 5-7 minutes on each side or until they get a nice golden crust. Don’t rush this part; those crispy edges are the best!
  • Serve It Up: Once they are cooked to perfection, pop those bad boys on your burger buns, add your favorite toppings, and there you have it—your very own delightful veggie burger! Oh, the joy of sinking your teeth into it!
